We pulled 30 ft TT in both directions on that road last summer. Hills are typical for that area and road seems nice and wide.
I did notice that the road in that section had sags in the pavement very regularly spaced that made it uncomfortable to drive very fast with our rig. I wouldn't avoid it for that, but I wouldn't want to drive 500 miles on it.
Depending on what your fuel is, pay attention to where you plan to stop. There isn't much infrastructure in Utah, especially out away from the towns (and some towns don't even have fuel). We did scenic route 95 from Blanding to Hanksville and it was 142 miles between service stations.
