here's my two cents worth...
the coast will be windy and rainy... some winds may be over 60 mph...
if you want to avoid the snow on i-5, watch for a few warm days and cut from i-5 to the coast at grants pass... as the oregon caves area may have snow and you'll want to let it melt. it's a nice scenic route i.e.: winding and narrow... that said
if you drive the coast, stay on 101 until you get just north of san francisco. then head over to i-5.
as the coastal range crossings, may have snow on them, south of grants pass.
personally i would stick to i-5 and just be prepared to stay overnight in the grants pass area, until the roads are safe, if you happen to be traveling during or just after a snowfall. it's only a few hours drive from the grants pass/medford area to south of shasta... from Redding south you won't need to worry until you get to the grape-vine going south, or the pass going to barstow..
i have towed these routes pulling a 34' trailer with a 1/2 ton and later with a 1 ton pickup.
if you can travel the coast during november/december you will enjoy it more, especially if you time it between the storms. as we usually have a week or two of nice weather during that time frame.. i.e., virtually no wind...
