How do we know which roads, or routes are able to handle RV's?

You don’t always know and that makes the trip more interesting. I deliberately drive the scenic roads and black, squiggly lines on the map, but I pull a small TT, too. A big rig might want to avoid them, or at least do some research first. But the interstates allow you to drive from coast to coast and never see anything. If you want to really see the country and get a feel for the people just pick a highway and go.
