I-10 through the gulf states and then up to I-40 in New Mexico and Hwy 93 to Las Vegas would be my choice of a route.
From Vegas to Portland is complex due to possible weather conditions over the sierras. Hwy 95 to I-80 may be a good choice if chance of snow but it backtracks to Sacramento. I-80 is plowed often to keep it clear. I-5 from Sacramento to Portland.
