All good roads, with only the occasional small town to deal with.
Spent most of my life in Fl and can say with certainty that I-10 and I-75 can be incredibly dangerous, frustrating and often bumper to bumper, so I don't mind taking the scenic route and the extra time to avoid them as much as possible.
Most of the side roads I mentioned are 60-65 mph speed limit, which often can be faster than I-75/10.
Only drawback is gas stations can be sparse, so plan accordingly.

I use this route all the time with a variation or so....Once you hit Thomasville,you can stay in a campground there called City of Roses...a few permanents but Bill the owner has all in control,so it is more than a decent place to stop for a day or two..then straight down 19 to 27 and i stay on 27 all the way down to Disney...to 192 and int the Fort...Chuck
