I fulltime and spent last winter in a Phoenix suburb resort. It was the first time I'd been to the desert in the winter. I lived the last 20 years outside Orlando and here's what I noticed -
Beautiful sunny skies, usually cloudless, every day.
No humidity. This is just as important in winter as it is in summer.
The temps go down quickly when the sun sets. I was a little surprised just how fast this happens. But they come up quickly in the morning when the sun pops up. As I said, most days seemed to be completely cloudless.
I think you'll be fine to sit outside for several hours after sunset, especially if you have some kind of a fire going. And I always thought the high humidity in Florida made it feel colder in winter then it really was. I liked being in Arizona, especially those sunny days.
There is a HUGE difference in daily temps (and weather) between a place like Flagstaff (elevation) and Phoenix. If you go, pay close attention to the elevation.
Last - NOWHERE in the upper 48 is as consistently warm in the winter as southern Florida.
