Big Sur is great any time of year - but does get very crowded in summer, as others state. May, you should be fine - if you get a bit of storm or some wind, stick around, it'll change. And, sometimes, that storm or not-so-perfect weather gives you an entire different view of the coastal areas too.
We drove down the Oregon/Calif coast for ten days in ripping, windy rain and loved it. Mother Nature showed us something other than 'mild sunny day's. We got surging seas and high-tides. Seals and sea lions were out because the high water covered the caves where they often hide out. So, keep an open mind about weather.
