We work camped in Branson for 7 mos. last year. Here are a few suggestions for you:
There is a public beach at Table Rock Lake -- it's called Moonshine Beach and is quite nice. I'm pretty sure it will be open then. There is an admittance fee, but it's for a carload.

You can tour the Shepherd of the Hills Fish Hatchery for free -- and it's pretty interesting.

There are some hiking trails -- Paul & Ruth Henning Conservation Area. (Paul Henning created the old TV show, Beverly Hillbillies.)

The Ralph Foster Museum at the College of the Ozarks was VERY good. Among many other things it has the old truck from the Beverly Hillbillies. There was a charge, but it wasn't bad.

There are over 14 mini-golf places in and around Branson. Some have really reasonable prices!
Walk along the water's edge at Branson Landing. Make sure you stop to see the Fountain Show.http://www.bransonlanding.com/Fountains.html
If you like to eat out at all, Branson has the best Golden Corral I've ever been to!
