How near the Gulf, and what kind of fishing? Do you want to walk out and fish.
There's a beachy Gulf Coast fron Pensacola to Port Saint Joe, then the settled area gets away from the coast until you get down past Spring Hill, where there are again barrier islands with beaches.
Between, at Crystal River there is settlement, infrastructure, and roads a few miles out to a beach and pier, and further north there is a port on tje Gulf at Steinhatchee.
However, all through this long stretch of no Gulf settlement (the Nature Coast) the land is threaded with waterways through the low forests and wetlands, and the fishing is good. You can find some RV parks right on the water, but a small boat makes things nicer.
Fishing on the Gulf, if you want a boat on open water, then I recommend the Panhandle, or port communities of SW Florida' Tarpon Springs to Naples, for renting boats, pilots, and guides. Though the deep sea fishing is probably better in the Keys.
