Unless you wear gloves at all times, if someone wants to steal your fingerprints, they can. If the thief is sophisticated enough to hack into both the system at the park and then steal the digitalized biometric data regarding your fingerprint and then hack into another biometric locking system and use the stolen data to breach that lock I seriously doubt they would be wasting their time trolling RV parks.
It is like Dr. Evil in the Austin Powers movie who says he would be willing to not destroy the world for ONE MILLION DOLLARS, and then everyone laughs at the ridiculousness of his low ransom.
I would bet a lot of money that this whole scheme came about because residents were complaining that the current security system was being abused or was costing the homeowners association too much time and money helping people who keep losing their keys, key cards, remote controls or whatever else controls the gate. Then some know it all said that a fingerprint based system would solve all their worries for not much more money than whatever other system they were considering since you can't lose your fingerprints. On top of that, they would have very reliable security information as to who entered the property should there be a crime issue. Great in theory, but as others have said, might be less than 100% reliable. I wouldn't be worried at all about privacy, I would be worried about the reliability of a locking system that may or may not work under less than ideal circumstances. That being said, a commercial, statically placed reader may be much more robust and reliable than the reader on a smart phone. I would be very comfortable with all the other aspects of that system if they could convince me the system wouldn't leave me stranded outside the gate.
