I've camped at the infield at Pocono Raceway many times. The TT had a pretty small tanks, but my friend and I made it two nights both taking quick showers, and we never ran out of water. I never used the honey wagon service. I dumped the gray water on the ground (to save weight - I know, bad boy) and dumped the black tank into my sewer cleanout valve when I got home.
The loudest sounds probably come from all the generators that run all day and into the wee hours of the morning. I remember many years ago I was at a race in my PU, and my next door neighbor started up his loud generator at 7 am, and it was virtually underneath my bed. It scared me half to death!
Some tracks have "family" areas for camping where things are a little quiter. It's still pretty loud, but there are less of the out of control heavy drinkers wandering around screaming and falling down drunk.
