I've heard of Bahia Honda, but the pictures make this park look really crowded. Is that the reality?

Bahia Honda is the most desired park CG in the Florida SP system. Yes it is possible but you must be online and ready to reserve the instant that the dates you want come open. I think that is 13 months in advance, but check their website.
Jetty Park is a county park at Port Canaveral near Daytona. It has good beaches but not much in the way of hiking. Indeed I can't think of any on the beach parks that have good hiking trails. Once you experience Florida 'sugar sand' you'll probably know why, plus the beach parks aren't that big.
There are a few other State Park CG in the Keys and some along the east coast, all will be in high demand since February is in the middle of snowbird season. There are others up in the Florida panhandle but the same applies to them. So make your reservations as early as you can.
There are lots of commercial cg but expect prices in the $100/night range.
As spoon points out the ocean/gulf waters get cold at that time of the year. You won't find many Florida residents in the water but snowbirds think the temps are tolerable.
I'd get on ReserveAmerica and do some exploring of the beach parks. That will give you an idea of when you need to try to get reservations.
Another possibility is Myakka River SP and Oscar Scherer SP aren't directly on the beach but you can drive to the beach in 30 minutes or so. Myakka has some good hiking trails, lots of alligators, and a walk in the top of trees. Demand probably won't be as great for those. They are both in the Sarasota area which has a lot of interesting places to visit. Tomoka SP is on the east coast and is even closer but not on the beaches.
