I live near Blue Springs SP and it's great for watching Manatee in the winter. They will have about a hundred there in winter and there are always some that stick around even into summer. Your kids would enjoy swimming in the crystal clear water that's about 75 degrees year round.
Just about my favorite place in Florida is John Pennekamp SP at the north (east ?) end of the Keys. Please stop in for a day. Can take snorkel, sightseeing, or dive trips or rent boats. CALL AND GET RESERVATIONS. I've snorkeled there in April wearing a shorty wetsuit. The water was much warmer then I expected. You can rent everything you need, including wetsuits. Just a wonderful place. They also have a campground.

I've eaten there many times and each time was the best. (I think it's time for a road trip.)
