So not to confuse others that have never been to Fort Wilderness, the boat doesn't got to Epcot, only the Magic Kingdom. You can eventually get to Epcot by hopping a few buses, but there's no direct boat ride to Epcot. To get to Epcot or the other parks, pick up a bus at the Outpost (where you check-in).
We always bring our bikes when we are at the Fort, but we generally don't go to the parks when we go to Disney (usually once every 5 years or so we go to the parks). So we use our bikes all the time.
With a golf cart, the bikes would not be necessary. There's a lot more parking for golf carts at Fort Wilderness than bike parking. You can go almost everywhere in a golf cart that you can with a bike.
