The other commenters have already given the suggestions I would. I will add, there is an RV park near Gypsum called River Dance RV Park. I've never stayed, but have passed it many times. It's pretty barren and right by I-70 but it seems clean and well maintained enough. Just not very pretty... Google Street View has a pretty good picture of it.
Also, if you needed to fill up with water and/or dump, there are free dump and water stations at rest areas in Rifle and in Edwards, both with easy access from I-70 and plenty of room to park to use the restroom or stretch your legs.
