Yellowstone involves a lot of driving even if you camp in the park. And the walks around the geyser sites are a mile or two. That's harder with a small kid.
I'd say Grand Canyon.
But if you want to do a mountain park then don't forget Rocky Mountains NP. You could add an overnight in Great Sand Dunes which is always a big hit with the kids. And still do Palo Duro and Carlsbad. There are old west type sites in southern NM with the Billy the Kid towns. Not like Tombstone tho. It's a lot closer than GCNP and there are several other small parks in NM on your way back.
I've been to them all.
