I have been to both as an adult, and while the Grand Canyon is impressive it's not a destination trip IMHO. If you want to hit the Grand Canyon it should be on the way somewhere, Bryce Canyon, Zion, etc.. It only takes an afternoon, if your not hiking, to see all the sights the Grand Canyon has to offer.
Yellowstone on the other hand!! You could spend 10 days there and not feel like it was enough. At a bare minimum you want 3 full days in the park, but 4 or more is better.
Do stay in Jackson one night and enter Yellowstone from the South Entrance. Without hiking you can see plenty of the Teton sights in a day, and even go for a small boat ride and a short hike.
Be sure to stay in the Park at Yellowstone, otherwise you waste a lot of time driving in and out. Some of the best times are sunrise/sunset and staying outside of the park makes for a LONG day. We spent Labor Day there, 4 nights, and from unhooking the TT to hooking it back up was 395 miles. Canyon is our favorite Park campground with Madison being a close second.
If you are taking 2 weeks off of work that gives you 16 days you can be gone. There is a lot you can do in that time, even more if you leave and get 4-8 hours on the road Friday night. It wouldn't be a horrible stretch to hit the Grand Canyon on the way, do the South Rim drive and head North. The country between the Grand Canyon and Salt Lake City is a beautiful drive.
Either way with this much planning time you are going to have a great trip!!
