Personally I think I would opt for Yellowstone also because of the 2 1/2 year old and I'd save the Grand Canyon for later. If I was going to go to the Grand Canyon, I would want to go down to the bottom, I'd also like to take a float trip down the Colorado and with a toddler it would be hard. While Yellowstone has the wonderful wildlife s/he could enjoy.
And you can go through Cheyenne for some old west history.
Which ever you chose, you really can't go wrong but get your reservations in early.
