I'd pick Yellowstone. Plan on most of your days there and a couple at the Tetons. The young one, at 2 1/2, won't care much one way or the other where you go, although some of the animals at YNP might be more impressive to someone of that age.
I see that you are tent campers. Since it's quite a fair drive to YNP from TX, might I suggest that at least one of your nights each way be spent in a motel. This will save you perhaps a couple of hours each day since you won't be setting up and breaking down camp and repacking. You can easily find a less expensive alternative by picking a smaller town away from tourist areas along your route.
