Tailwind, here's another option for you: SLC to West Yellowstone on July 7th, with a reserved campsite at Grizzly RV Park in "West." (West Yellowstone is 300 miles from SLC and is almost all 4-lane road, I-15 and US20.) Use that as a base camp for 5 days to visit Yellowstone. You can do a day trip to the Tetons & Jackson from there, but will spend several hours getting down there and back, so I'd suggest you reserve another 2 nights at a CG in the Tetons for your base camp for that park; Colter Bay RV Park is by far the best in the area if you need hookups. I don't know where "Headwaters" is - if that's the old Flagg Ranch, between GTNP and Yellowstone, that would be an ok option for the Tetons, but still quite a distance from some parts of Yellowstone.
Yellowstone is HUGE. Speed limit is 45 (or less in some spots) and between traffic and animal jams, it moves on average much slower than that. Add frequent stops for photo-ops, walking around geyser basins, etc., and you'll see why we all recommend spending a minimum of 4 days in Yellowstone alone. (I agree with the 5-and-3-day combo for YNP & GTNP.)
If you don't need hookups, then others' suggestions for Madison or Grant Village CGs are good; Bridge Bay or Canyon CG are also good choices. But make reservations!!!! (And do it now; reservations for YNP lodging & campgrounds opens more than a year in advance.)
