The South Fork, Creede, Lake City area is a beautiful area. And at 8,500' and higher you will not have to worry about heat, except maybe getting some in the morning chill, even in August. Do you want to zero in on Colorado only? New Mexico has some nice areas and Ruidoso is like a mini Texas. :) There's also Cloudcroft, Eagle Nest, Red River for starters.
Utah also has many 'cool' places.
