Agree with your priorities on the Dakotas, etc. Don't rule out Myrtle Beach-it's way too much fun. Not all vacations have to be educational. Gettysburg and Williamsburg would be on my list as well. Just because they hit college doesn't mean they won't travel with you. I'm assuming they'll be home over some holidays and the summer. My son is 22, in college, and still coming with us. If it will be because of financial reasons, do the big trips now and the smaller ones later.
