How much time have you allowed? Remember, 1-10 is almost 1000 miles across Texas, so that will take a while. Where in Arizona are you going? I would suggest you make Van Horn your last night in Texas, and the next day drive clear to at least Las Cruces - we usually go to Deming because we're Escapees and there is an Escapees park in Deming.
I-10 across Texas is more like 850 +/- miles but either way it's a fur piece.
Houston: the by-passes around Houston are, for the most part, toll roads. We usually just barrel thru on a Sunday morning. absent a traffic wreck you should be thru at or above the posted limit.
San Antonio: SA traffic can also be a nightmare. there are two good by-passes to consider:
1) texas route 46. pick it up near Seguin and follow it ton New Braunfels. take texas route 337 around New Braunfels back to 46 to stay off city streets. rejoin I-10 at Boerne
2) North Loop 1604. this is a bit closer to SA than 46 but it will be fewer total miles. 1604 has a few lights on it but it's 4-lane all the way to where it re-joins I-10.
between Houston and San Antonio you'll see billboards for Buc'ees! excellent fuel stops...you'll be amazed at the size of these places. their C-Stores are bigger than some wal-mart neighborhood markets.
