How many days to do the Falls area, I understand that the Canadian side is supposed to be the best, but can both sides, with all they have to offer, be done in 4 days, or is something more like 7 need...

4 days should be fine. Go on the websites for both sides and look at the package deals you can get for attractions. Figure out what you want to do on each side ahead of time. The boat ride into the falls can be done from either side.
