If you're into wine, just south of Salem there is Willamette Valley Vineyards. It has beautiful facilities and a beautiful view of wine country. I highly recommend it. But, as far as wine country goes, almost everywhere in western Oregon has a winery nearby, even on the coast. You really don't have to go out of your way too far.
Plan for an entire day in the Gorge. Visit the Vista House for the breath-taking views. If you are fit, there is a well-traveled and maintained trail to the top of Multnomah Falls that is well worth the hike. Cascade Locks is a great little town and so is Stevenson on the other side of the river. The town of Hood River has a lot to offer, even the Mt Hood Railroad that goes up into the heart of Oregon apple/pear country to Parkdale. It's not a very long trip, but worth it. If you can, cross the Columbia River and go back through the Gorge on State Route 14 on the Washington side. There are several tunnels, Beacon Rock, and a place where the road just hangs from the side of a cliff. The bridge at Hood River is very narrow, though. There is Bridge of the Gods in Cascade Locks where you can cross, though you'll miss the tunnels unless you backtrack.
Or, from Hood River, you can head up Highway 35 and to US 26 and do a circle around Mt Hood, stopping in Government Camp to ride the alpine slides. Along the way, there are many fruit stands you can visit. Near Government Camp is the road up to Timberline Lodge. You've seen the outside of it if you saw The Shining, but the interior is not the same as the movie.
There's so much to see here. I've lived here over 20 years and still feel like I'm discovering things. Hope you have a great trip!
