I've stayed at Sunset King RV Resort in Defuniak Springs and it was nice, although it's probably 6 miles or so off of I-10 (where there are lots of hotels). Try this link:

A while back, I was also looking for good places west of Vicksburg and pretty much couldn't find anything, so I decided just to stop at the Ameristar park in Vicksburg.
Ameristar Vicksburg. It doesn't appear to be all that great, but it looked OK for an overnight stop.
West of that... sorry, no suggestions.
