Hi ekirkland. We generally did not have a problem with heat in Utah last May. Some of the parks where cool in fact because of the altitude. Goblin Valley, Capital Reef, Kodachrome & Bryce are all higher elevations were not hot, one morning in Bryce had snow on the ground. Even Zion had freezing sleet one day higher up but a day or two later was back to 70's & 80's. May is a great time to go, flowers blooming , green, etc.
