When you get to Sequoia, Azalea Campground is ok for big rigs and quite cool at 6500 feet -- right next to Grant Grove. My only other suggestion is that if you like seclusion, there is boondocking for big rigs on the North Rim of the Grand Canyon at 7000 feet in the Kaibab National Forest -- just take it easy on those gravel roads and you will be fine. If you are bringing mountain bikes, portions of the Rainbow Rim trail are suitable for kids.
Also, if you get to Zion, there is a great bike ride -- you ride up the canyon to the Narrows (not difficult at all) and then coast back down.
