I do a San Diego to Lubbock or San Diego to Ft. Worth road trip at least once a year. We did your Day 3 plan at Winslow. Make sure you find the corner with a statue and painted mural of a girl in a flat bed Ford on the side of a building.
We did Carlsbad a few years back and enjoyed it a lot (lots of walking).
We always plan a stop at the Guadalupe Peak park office for a break and walk around or picnic. Very scenic with walking trails.
We took an alternate route on Highway 70 from Las Cruces to Alamogordo. Went to White Sands and drove through the park. Lots of white sand for sure! We stopped at Holloman AFB for gas and a break.
Stopped at Petrified Forest on the Winslow route. Drove through and hiked a bit for fun. Also did a side trip to meteor crater. They have a nice museum there.
