Suggestions for the gulf coast first of November

Thanks everyone, we've reconsidered and are going to try the beach thing. We'll tool down to New Orleans then follow hwy 90 up the coast.

If we go the first two weeks of November, will we need to worry about reservations? I hate to make them because we like to stop wherever something intrigues us.
