Input on were to stay and things to do. Would you skip any of these? Was only planing on staying two nights at each stop unless we really liked the area and wanted to see/do more.
It depends on what you like and whether or not you have children with you. As an experienced traveler I recommend only going to two places and spend more time in one or two places rather tthan trying to dash from place to place. Travel is about savoring the places you visit rather than simply putting a check mark on a to do list.
We would spend more time in Chattanooga and Amish country and save Nashville and Memphis for a music-themed trip.There's plenty to see and do in Chattanooga. Amish country is relaxing with great comfort food restaurants. Here's Chattanooga's Trip Advisor Page

I recommend going to visit Lehmans General Store in Kidron, OH if you go to Amish country. Tons of fascinating items there.
