Looking at what was already mentioned I would add the 99ers Museum (women in aviation) because I'm a flying buff. Also depending on interest, OKC also has the 45th Infantry Division museum.
Oklahoma University (Norman) has the Noble Museum of Natural History, not as big as the one in NYC, but an interesting collection that includes a T-Rex (or whatever they call it now).
Another specialty museum, Santa Fe Depot in Guthrie has a huge collection of model trains and model automobiles, run by a club, usually open in the daytime when the restaurant in the depot is open.
