You might consider a small solar system instead of the generators. Of course, it depends where you plan to boondock (heavy tree cover or in the open somewhat; high heat areas or cooler temps). We can always find places where air conditioning is not needed. There are many ways to conserve water use. We can go 12 days with 65 gal. grey. We absolutely don't dump on the ground and don't take outside showers. We do have enough panels that we don't have to park in solid sun. They still charge in light shade. We also don't run the air conditioners and really conserve electric - and water. Coffee and toast are made on the stove - no appliances. We love it!
On Edit: I see you want to go to Moab. For comfortable temps during the summer with air conditioning you would need to stay in the LaSal Mountains. Naturally, it would be a longer drive into Moab but much cooler.
