If you are doing your taxes yourself, it doesn't matter where you are when you file. If you have an accountant do your taxes, just send him/her whatever he/she needs. If you aren't comfortable emailing them, just ship them or fax them.
If you need to get your forms in the mail, then just make sure your mail is being forwarded to you while you are away. Tax related documents and IRS correspondence do not have a Do Not Forward order on the envelope.
