We were there this year and left the day before they closed up Fishing Bridge. The after Labor Day idea is good as the crowds are down. Unfortunately, so are the temperatures. If you go them, be ready to deal with 30s at night and 60s for days.
We enjoyed it a lot even though some things were inconvenient. Like the road closures that almost made me back out of the plan and I am glad we did not.
