Checkout Westends thread for sure. He has an excellent rebuild thread with lots of photos.
We also rebuilt our water damaged RV, but didn't do it completely from the inside out. I did up to a certain point from the inside and then removed the roof and siding to rebuild the walls and roof trusses. You'll likely need to start removing interior walls to see exactly what you're up against construction wise, but ours was 2x2's for the most part. We have details of our rebuild in our signature.
On a side note, we ordered our new EPDM roof material on Amazon and got a great deal with free shipping, so I'd compare online prices there to see what you can get. Good luck with the repairs!
