Never done one in a RV but several in homes and mobile homes. I always use the caulk / adhesive made for tub surrounds with excellent results. Did one with fiberglass walls and it held fine. Not sure I would trust adhesive tape to hold up.
May be hard to find a one piece unit to fit your space. And like a previous poster said it will probably not fit in the RV. The ones with flat wall panels can be cut to fit your situation. They usually have corners that go on top of panels to hide the seams and make it waterproof. Corner pieces may or may not have shelves. Shelves could be good for you or eat up valuble space, so depends on the room you have.
Pretty easy to install if you have flat solid surfaces to work with.
