AC, microwave, coffee pot are all high draw. You would be a lot better off running them with a generator. But the microwave and coffee pot are doable just because of the relatively short run times.
AC is pretty much out of the question unless you have really deep pockets and a lot of unused cargo carrying capacity, the battery bank will be huge. Then you will need something big to recharge it, you won't do it with solar unless, again, you have very deep pockets.
