Jimf1234, If you Google 20 amp dpdt switch you will find them for under $20. That's all you need.
In your second drawing I'm not sure why you would want to switch between the ac unit and an outlet. You can just wire them in parallel. If you are worried about overloading the circuit, the pole breaker should trip...or you could install one in the line.
