We did a similar project in our 5th wheel, behind the stove there was the papered wall board I was so afraid of grease splatters we found a product at Lowes in the kitchen appliance dept. They are large plastic sheets that look like the antique ceiling tiles, different design patterns and colors. Cut with heavy duty scissors or even tin snips they go up with double sided tape and also come with material to cover the electrical wall plates and trim pieces to finish the edges. Covered the whole wall area behind sink counter and range. Have had them up for over two years and love them, they have never come loose, heat resistant and wipe clean in a second. The dealer that we bought the trailer from even commented on them looking nice and have had several other compliments on them. We chose a copper color that blends perfectly with the floor.
Hd the same wall board behind the towel rack in bath, took down the rack and placed a 1/8" inch thick piece of clear plexiglass behind the rack using the screws from the rack to hang it. No worries now from wet towels or swimsuits damaging the wall from moisture. Also did the same thing on the side of the cabinet for wet dish towels, hung the plexiglass with four small screws and used Command Hooks on top of it. Both applications work great.
