Why not? As long as there is enough space from the cabinet frame for that big washer or whatever is holding it to the counter underneath. You can install pretty much any faucet from big box store.
But you might have to add short supply lines and/or cut your existing PEX tubes, to connect it. Hopefully you won't have to cut - try bending/pushing those PEX tubes first.
If you have to cut PEX tube, you will need supply lines with female fitting on the supply end, and a pair of Sharkbite push-on fittings with male ends to connect to these female fittings. The fitting on the "faucet end" of supply line will depend on what is there on the faucet - most often faucets have female 1/2" nuts. Home Depot will have all this.
