I had an interesting conversation with a motorhome repair facility just a couple of weeks ago. He says that one of the biggest repair issues he is seeing is coming form the toyhaulers. As mentioned above, the cabinet and similar framing is used to keep things square and level but when that hardware is not there (that big empty space for toys!) the floor is bowing throwing everything out of line. They have to jack up the center, allow the outside walls return to plumb and level and then build a superstructure to prevent this from happening again in the future. You are taking out cabinets but you are also taking out structure. Just be sure you don't ignore the possible pitfalls that an open structure might create.
