Well, if you saw this photo earlier:

And this one, which is taken from below it:

Or this one, taken right above it:

You can probably appreciate why I decided I ain't tearing that out for headroom for an expanded shower. It's just too hard to know what's going on structurally there, where the living room ceiling meets the higher bathroom ceiling (under the rooftop deck). I'm going to keep the same footprint for the bathroom... which is pretty good for a 34' fifth wheel.
So, that leaves very little option for the bathroom configuration. The original layout had the shower on top of the propane box. That would be okay headroom for a guy like me (5' 8"), but at about 6' 1 or 2", it's ridiculous. My sons are 6' 3" and 6' 5", and maybe they'll visit me at the beach someday. (Besides, stepping up to a shower or toilet really bothers me.)
So, here's the latest layout, and probably the final. It's not as clean (or roomy) as the last design, but I'll just have to make it nice. The sink is over the metal box, 3' wide, and the shower is to the left:

You can see there'd be enough room to open the door to the shower:

And here you can see where the toilet would go: over the square hole in the floor (was laundry chute). I'm a little concerned about how cramped it will be, but I'll make it work:

And I'll still build a built-in of some kind on the other side of the wall, instead of a bump out (the dark area is where the original cabinet was):
