The house battery in our Livin Lite truck camper has died after about 3.5 years of frequent use. Lots of boondocking during which it kept the fridge, LED lights, water pump, ... running for about 3-4...

You are on the right track.
Your Dometic 3-way fridge does not run 24 hours a day so I think you you can lower that to maybe 50 AH.
Some of those AH that you using will be during the day when the solar is charging so you save some there too.
When I built our solar system I started with two 6 volt GC batteries and two 160 watt panels and it work good. (I think this should be your starting point too). Then a could years latter I added two more 6 volt GC batteries, one more 160 watt panel and a 2,000 watt inverter.
Just be sure to build your system with room to grow so bigger controller and wire than you need.
