We did the same as you, I had a friend selling panels, got a 100 watt Kyosera panel first and a Sunsea controller, all lights are LED, we conserve. Added the second 100 watt panel and it is perfect for topping off batteries to 100% for night time furnace use.
We camp on the Northern California Coast from November to March (crabbing season), night time gets into the low 40's, maybe mid 30's but not often.
even with the fog we still have been satisfied with 200 watts, works great for us and fit our budget.
I still bring the Honda 2000 but only to run the Microwave. Wife sometimes requires it for a hair dryer, but I do not pack extra fuel.
