FWIW, me and #2 Daughter are now into part-time cutting board mfg. She gets enough preorders to make a 1/2 dozen or so and we make them in my shop. They're easy to make with her design and the younger veg-oriented crowd like the smaller sizes. Materials used are primarily Walnut and hard or curly Maple. Food grade mineral oil is the finish of choice.
My TT has enough counter space where covering the stove isn't needed but if I did want to make something, it would be along the lines of what you have. Nice work and it should last for years. I see butcher blocks built in the early 20th century that are still in one piece.
