Putting the vent in should not be a real big deal. I think the top of the fridge opens to the cavity above and behind the cabinet facia. Sawzall the hole using the base of the vent as a template. Screw it down and seal it up.
I had to replace the top of the vent and while looking down the hole saw the top of the fridge.
Getting a weather tight seal would be the trick.
