There is no technical reason that a 5th wheel hitch couldn't be built to pivot more. But there is also no technical reason that it needs to pivot more because it can't pivot any more than the 6" or so space between the fiver overhang and the pickup bed side rails.
5th wheel hitches with side to side articulation aren't designed to use the full 6"-8" of distance between the sides of the bed and the bottom of the 5er. My 5th wheel hitch stops articulating long before bed contact unlike the GN set up talked about which is one big reason the OP gave us his reasons for using the ball hitch setup.
