There's no reason you can't pull a fifth wheel with a lifted truck. It's just that no one makes one like that, except for something custom.
Most lifts ruin the carrying capacity of pickups too, something the lift makers don't want to tell you. They tell you how nice their lift rides. They don't tell you what your GVWR will become.
