As my husband says when he wants the "No" to be stronger... "this is not a no, this is a hell no!". I drive a lot and use to pull our TT, but have not pulled the 5th wheel, no reason I just have not. I do know that unhooking a 5th wheel must be done by following a very specific routine. I never interrupt him when he is unhooking. Just too much can go wrong and can result in damage or injury. If it is really important to your wife to experience this weekend, tell the friends that you have to go on Friday or it just is not worth the trip and perhaps another weekend would be best.
